Theme: Kid Friendly Dishes with Nuts and Legumes
Dish: Date Nut Rolls/Khajoor Katri
I originally made these as a sweet during the Diwali season. But as I made it, I realized the ingredients in this sweet dish very closely resembled the list of ingredients on a trail mix or energy bar. Without any ingredients such as corn syrup and having all natural ingredients I was convinced that this was good enough to be added to kids lunch boxes. Since it is a sweet treat, it brings great joy to kids to find this in their lunch boxes, I also offer it as a snack, especially if he has soccer practice after school or dance class, so that he is energized and feels full, without thinking that he is having something healthy.
Also, dates and nuts together, and I especially love the combination of almonds,pistachios and pumpkin seeds in this roll, combined with the dates and raisins. This stays good in the fridge for about a month. You can adjust the recipe to use the nuts you like in this roll.
1 1/3 cup pitted medjool dates, chopped
3 tbsps. butter
1/2 cup(1/2 can) condensed milk
1/2 tsp. cardamom powder
1 cup powdered milk
1/2 cup pistachios
1/2 cup sliced almonds
1/2 cup slivered almonds
1/2 cup shelled pumpkin seeds pepitas
1/2 cup raisins
1/3 cup coconut powder
Puree the dates in a blender. Set aside.
In a heavy bottomed pan on medium-low heat, toast the nuts one by one, until you get a nice aroma, but the nuts don’t change color. Roast the sliced almonds and slivered almonds separately. Even though they are the same nut, they have different roasting times since they are of different size and shape. Set aside the roasted nuts. In the same pan, melt the butter and add in the pureed dates to the butter. Add in the condensed milk to this as well. Mix to combine.
Keeping a low flame, add in the powdered milk and cardamom powder. Mix well. Add in the nuts and raisins and stir just until the mixture is heated through. Don’t worry if the nuts are not fully incorporated into the condensed milk date mixture, or that you are not cooking the nuts along with the milk powder, condensed milk mixture. Remember, the nuts are already toasted. Remove the pan from heat and let this mixture cool completely.
Butter your fingers and knead the mixture to ensure the nuts and raisins are fully incorporated. Divide the mix into four parts. Roll each part into a log about 5 inches long. Roll the log in coconut powder and set on a plate. Repeat the same process for the remaining four parts of the date mixture. Cover the logs with plastic wrap and refrigerate for an hour or more. When ready to serve, slice into 1/4 inch thick slices. Enjoy as a sweet or a snack!
Verdict: These rolls are super rich in nutrients and in protein and in combination with the dates and milk flavors, makes a pretty decadent sweet, and also a very nutritious snack. It also a very easy to make dish, that will get you a lot of kudos, as it looks like something from a high end sweet shop, and not something people would think you made at home.Pin It
