Bhapa Doi(Bengali style steamed yogurt pudding)

I have always been known for my sweet tooth. But, these days I have been trying to limit sweets, or defer to healthy versions of sweets. When I came across the recipe for ‘bhapa doi’ here, I was excited, because it is nothing but sweetened steamed yogurt.

I halved the original recipe, as I had a half tin of sweetened condensed milk on hand. The recipe is just equal parts, sweetened condensed milk to milk to yogurt that you steam until set. Chill and serve topped with nuts of your choice.

1/2 cup sweetened condensed milk
1/2 cup milk
1/2 cup thick, hung yogurt
1 tbsp raisins
1 tbsp chopped pistachios
1 tbsp sliced almonds

If you don’t have thick yogurt, strain it by placing it over a tea sieve overnight in the refrigerator. Whisk the thick yogurt along with the milk and sweetened condensed milk. Pour into a deep dish or individual ramekins. Seal with plastic wrap. Place in a steamer or a pressure cooker and steam for about 20 minutes. I used my idli steamer to do the job.

To ensure it is set, you can use the cake tester method and test with a skewer. Sprinkle the doi with the pistachios, almonds and raisins. Let cool to room temperature. Cover again with the plastic wrap and chill in the refrigerator. Serve cold.

Verdict: We loved this sweet yogurt pudding. My son who is 18 months old especially enjoyed eating it. He is a finicky eater and if he loved it, it says enough about this dish, I think. 🙂
