Acarajé are Brazilian Black eyed pea fritters that normally contain chopped small shrimp or dried shrimp. This is a vegetarian version of the same delicacy. It is very easy to make and tastes like the Indian vada.
1 cup black eyed peas, soaked overnight
1/2 tsp baking powder
1/2 tsp salt, or to taste
3 cloves garlic
1 serrano pepper(optional)
1/4 tsp ground black pepper
2 tbsp finely chopped red onion
1 tbsp finely chopped cilantro
Wash the soaked black eyed peas, rubbing gently to remove skin. You don’t have to remove all the skin. Drain the water completely and place the black eyed peas in the blender along with the serrano pepper(if using), the garlic and salt. Pulse until it comes together, you don’t have to puree the beans, leave it a little grainy. Add the baking powder, black pepper, onion and cilantro and mix to combine.
Heat oil to deep fry, drop by teaspoonfuls(don’t make the fritters too big, or the insides will not cook completely) into the hot oil and fry until golden brown. Cook over medium heat so that it is completely cooked on the inside. Serve hot!
Verdict: Crispy and crunchy and it didn’t absorb too much oil. The baking powder helped in the cooking process and for it to get a good brown color.Pin It
