I almost always have pancake mix on hand, to make a quick meal for my little one. But, the other day I got Blueberry Pancake mix hoping for some variation. But, that did’nt fly. No one liked it and it was just sitting in the pantry. I figured it had to be put to use, or it would have to thrown out. A few clicks later, I landed on the recipe for this quick and easy coffee cake. It took absolutely no effort from my side and ended up being a very rich and flavorful streusel cake.
2 cups Blueberry Pancake Mix
1/4 cup sugar
1/4 teaspoon cinnamon
1 cup milk
1 medium, tart apple, peeled and chopped
1 tsp vanilla extract
1/2 cup Blueberry Pancake Mix
1/3 cup packed brown sugar
1 teaspoon ground cinnamon
1/4 cup cold butter, cut into cubes
Preheat oven to 350ºF. Combine the dry ingredients: pancake Mix, sugar and cinnamon. In a separate bowl, beat together egg, milk and vanilla extract. Add to dry ingredients and stir until moistened. Spoon batter into a buttered and floured square cake pan. Cover with chopped apples. To make the topping, in a small bowl, mix together the pancake mix, brown sugar and cinnamon. Cut in butter with fork or pastry blender until crumbly. Sprinkle over chopped apples. Bake 35-40 minutes or until toothpick inserted into center comes out clean.
Verdict: No one even guessed that I had made this cake using the pancake mix that they didn’t like. It was loved, the combination of the cinnamon and apple with the blueberry flavored pancake mix was quite yummy. I’m glad I decided to make something with this and not waste it. 🙂Pin It
