Coconut Milk Pulav with Peas

Canned Coconut milk is the greatest thing to have in my kitchen..I love it. It adds a richness to almost any dish. And, it is a fairly healthier option when it comes to adding heavy cream. It contains half the amount of calories and fat when compared to heavy cream. This coconut milk pulav is a favorite in my family, and is a quick and easy dish to put together.

Ingredients:
2 1/2 cups basmati rice
1 1/2 cups coconut milk from can
2 1/2 cups water
1 onion thinly sliced
4 green chillies thinly sliced
1 tbsp ginger garlic paste
1 tbsp oil
1 cinnamon stick
3 cloves
3 cardamom pods
2 bay leaves
1/2 cup frozen green peas
pinch of turmeric powder
salt to taste

Method:
Soak the basmati rice in some warm water for about 10 minutes. Set aside.In a pressure cooker over medium high heat, add the oil. Add the cinnamon, cloves, cardamom and bay leaves. Let the spices get fried and infused in the oil. Add the onions, green chillies, salt and turmeric powder. Fry until the onion softens. Add the ginger garlic paste and saute until the raw smell disappears.

Drain and add the rice to this. Saute until combined and the rice is slightly toasted. Add the coconut milk and water. Let it come to a boil. Check for seasoning. Let the rice cook in this mixture until almost all of the liquid is absorbed, stirring occasionally. Add the peas to the rice and gently stir to combine. Clamp the lid on the pressure cooker and set the weight. Reduce the heat to low for about 8 minutes. Remove from heat and let it rest for about 10 minutes. Fluff with a fork and serve hot.

Verdict: Creamy, rich and decadent. This pulav is indulgent food without a lot of fuss.

  1. I made this for dinner when I had guests over. It came out very well. I usually make peas pulao with just water as my mom does but this was creamy and delicious.
