Pudalangai Paruppu poriyal(Snake gourd channa dal stir fry)

To go with my spicy kuzhambu, I made a quick and easy Snake gourd stir fry with channa dal. Its quick, easy and nutritious too.

1 snake gourd, insides removed, quartered and sliced
1 small onion chopped
2 red chillies broken
1/4 cup channa dal
1 tsp oil
1/2 tsp mustard
1/2 tsp split urad dal
1/4 tsp turmeric powder
2 tbsp frozen grated coconut, thawed(optional)
a sprig of curry leaves
salt to taste

Soak the channa dal in water for 15 minutes. Cook in small pan with a pinch of salt until al dente. Set aside.
Heat oil in a saute pan over medium heat. Add the mustard seeds and let it splutter. Add the split urad dal and let it get golden brown. Add the broken red chillies, onion and curry leaves. Saute until onions turn limp. Add the sliced snake gourd pieces, salt and turmeric powder. Saute until the gourd is cooked but still crisp. Add the cooked and drained channa dal. cook until any water evaporates. Sprinkle the grated coconut and serve.

Verdict: Tasty and also very beautiful. I loved the color combination of the dal and the beautiful green the gourd turned when sauteed.
