I made these fries as a side for the ‘Hot Tamale Burger’. These are healthier as they are baked rather than fried and are also thick cut compared to the thin and slender ones you get at fast food joints. We really enjoyed the flavor of these fries with the burger.
3 medium russet potatoes
1 tbsp garlic oil
1 tbsp fresh chopped rosemary
pepper to taste
Preheat the oven to 425 degrees.
Wash and scrub the potatoes. Quarter the potatoes lengthwise, cut each quarter in half, yielding 8 pieces from each potato. Pat the slices dry with a paper towel to remove any moisture. Line a baking sheet with foil. Toss the potatoes with the garlic oil, rosemary, salt and pepper to coat evenly. Bake in the oven for 20 minutes, turning the wedges once at about 12 minutes to brown evenly. Serve hot with ketchup.
Verdict: Crispy and crunchy and guilt-free as they are baked. Lovely side to burgers and sandwiches. These would also make a good snack. The next time I make them I plan on adding curry powder to make these Indianised baked fries.
