Baked Eggs Florentine

Breakfast, all the more you hear about how important the meal is, but more and more I see myself skipping this meal, or settling for a bowl of cold mushy cereal. Not that I hate cereal, but I hate the fact that I have so much to do in the mornings, that breakfast tends to be the last thing on my mind. Cooking something up for, thats almost an impossibility. But impossible things just happen, and we call them miracles. 🙂

Yep, a miracle it was. I made a perfectly healthy breakfast, made from scratch and made for one, just me. 🙂 It so happened that my husband left early for work, my son was sleeping in, and I had time to kill. in the morning. Yes, you can be jealous of the above statement. Instead of the usual toast or cereal, I felt adventurous enough to try a fancy breakfast. I wanted something filling, but simple enough to make for one. I then remembered having come across an article from the ‘The Minimalist’ series, by Mark Bittman, called ‘Tender is the yolk’. I loved the title of the article, that it kinda got stuck in my head. A minute of googling/browsing later, my skillet was on, and a home alone girl’s breakfast quest began.

2 eggs
1 tsp butter
1 tsp olive oil
1/2 onion, chopped
1 cup baby spinach
1/2 cup fresh breadcrumbs
1/4 cup freshly grated Parmesan
salt and pepper to taste

Preheat oven to 400 degrees. Butter a shallow baking dish and set aside. In a skillet over medium heat, heat the olive oil, add the chopped onion and saute until soft, about 6 minutes. Add the spinach and stir again, until the spinach is wilted. Add salt and pepper to taste. Transfer the onion, spinach mixture to the buttered baking dish. Combine the breadcrumbs and cheese. Top the onions and spinach with half the breadcrumb mixture. Make two wells in the onion mixture and carefully crack two eggs into the wells. Place in the oven and bake for about 5 minutes. Turn on the broiler until the cheese and breadcrumbs are browned, for about a minute. Remove while the yolk is still tender. 🙂

Verdict: The runny creamy yolk combined with the crispy cheesey breadcrumbs, over healthy spinach. A side of toast for dipping and I was in breakfast heaven. I could eat this breakfast everyday, but I shouldn’t be greedy. 🙂

After a long break, I am participating in IHCC again. This is my entry to ‘Girls Night out’. Well in my case, its a ‘Morning in’, but I guess it fits the bill. 🙂

I am also sending this in to the ‘Breakfast Club #2’ Event, where the theme this month is the ubiquitous ‘Egg’. I have made it known that if I were to live in a deserted island and had one food to choose, I would choose eggs. My husband makes fun of this statement, because choosing eggs gives me access to chickens too.. I guess I am smart then I say. 🙂

Anyway…the Breakfast club event is hosted by two breakfast lovers…Sarah and Helen, and I am sooo glad that this month’s theme is eggs.
