Curried Potatoes in Wonton Cups

I’ve always wanted to make dumplings..and I got a package of wonton wrappers from the store. The dumpling plan didn’t quite workout, and the wonton wrappers had been sitting in the fridge. We were planning to go watch the fireworks at the downtown park, and we wanted to pack some finger foods for a quick picnic. I wanted to make something different, and decided to make these ‘Curried Potatoes in Wonton Cups’.

Its a very simple recipe, and I put it together in under 30 minutes. But, it also is a very upscale, trendy finger food, and wows anyone you serve it to. My recent obsession has been finger foods, as you would know 🙂 You don’t have to make the curried potatoes, just fill the cups with any leftover subzis or a salad to make a quick appetizer. Top it with a dollop of yogurt or sour cream for a more elegant presentation.

For the cups:
12 wonton wrappers
1 tbsp oil
1 mini muffin tin

For the filling:
1 large yukon gold potato, boiled and diced
1 small onion, chopped
1/4-1/2 cup frozen green peas
1 tsp oil
1 tsp cumin
1/2 tsp ginger garlic paste
1/4 tsp tumeric
1/4 tsp chilli powder
1/4 tsp garam masala
1 tsp lemon juice
1 tbsp chopped cilantro
salt to taste

Preheat oven to 350 degrees. Brush the oil on each wonton wrapper and place it in a min muffin tin to form little cups. Bake in the oven for about 15 minutes or until the edges are crisp and golden. Let cool in the muffin tin.

Meanwhile, heat oil in a pan over medium heat. Add the cumin seeds and let it sizzle. Add the onion and fry until soft. Add the ginger garlic paste and salt. Fry until the raw smell disappears. Add the diced potatoes and fry until golden. Add the chilli powder, garam masala and turmeric and fry for a couple of minutes. Add the lemon juice and frozen peas. Saute until the peas are cooked. Add the cilantro and switch off stove. Let cool.

Spoon about a tablespoon of the potato mixture onto the cooled wonton cups. Dollop with a little bit of yogurt or sour cream if desired.

Verdict: The crispy wonton skins filled with the spicy potatoes made a perfect elegant finger food. Everyone loved it, and it made for a pretty presentation.
