Zucchini Salad with Minty Yogurt Dressing

Zucchini are cheap during summer, and I bought quite a lot of them. I made this salad today in a jiffy, in an attempt to use up the excess zucchini and we loved it. Whats great about this salad, is that it makes a great appetizer/finger food. You don’t need to serve it up, or use a fork. You can just pick it up off the platter and eat it. More fun to eat, and less dishes to clean. :)

Ingredients:

1 zucchini

1/2 cup yogurt

1 tsp lemon juice

1 tbsp freshly chopped mint

1/4 tsp salt

1/4 tsp freshly cracked pepper

1/4 tsp ground cumin

1-2  tbsp salted peanuts, coarsely chopped

Method:

Wash and dry the zucchini. Slice it on an angle, into 1/4 inch thin discs. Line up the zucchini discs on the serving platter and set it in the fridge to chill.

Meanwhile make the dressing, by whisking the yogurt, lemon juice, salt and chopped mint. Spread the dressing over the chilled zucchini slices. Sprinkle with the ground cumin and pepper. Sprinkle the chopped peanuts and enjoy!

Verdict: The minty dressing made this a very refreshing salad. My husband is not a salad person, but he ate most of this plate. Its easy to put together and easy to eat too. The peanuts added a beautiful crunch to it.
