Simple Cauliflower Fry


2 cups of cauliflower florets

2 tsp canola oil

1 tsp of cumin

1 tsp of mustard

1 tsp of fennel seeds

1/2 tsp of turmeric

1/2 tsp of chilli powder

1/2 tsp of garam masala

salt to taste


Heat oil in the pan, add mustard. When it splutters, add cumin and fennel. Add the cauliflower florets and toss in the hot oil, until the cauliflower sears and attains a golden brown color. Add turmeric and salt. Toss to combine. Add 1 tbsp of water. Cover with a lid, and let the florets steam. When all the water is vaporized, the cauliflower will be cooked, but still have some crunch to it. Add the chilli powder and garam masala. Fry over medium heat until raw smell of chilli powder disappears.

Note: The cauliflower will still have a bite to it, when removed – it should not be limpy, or when it cools down it may turn to mush, as the cooking continues even after it is off the heat. Also, toss well so that the cumin, fennel and mustard seeds are rolled into the florets, it should not remain as a residue in the bottom of the pan.

Verdict: Sometimes the most simple things to make, offer so much comfort and warmth – not only while eating, but also in the making. I felt that comfort while making this simple cauliflower fry today. It was the accompaniment to plain old curd rice, for today’s lunch. Nothing fancy, but you feel so contented after the meal.
